Antonio
Spiced grasshopper vendor. Grasshoppers are called 'chapulines' in Mexico and are a very popular snack around Oaxaca, where Antonio works.

   

CX: How long have you been working in this business?
Antonio: I've been working in the 'chapulines' market for 15 years.

 
CX: How old are you?
Antonio: 18 years old.
 
CX: How do you capture and prepare the chapulines?
Antonio: the big ones and the medium ones we capture by hand and the small ones we use a special net. When the chapulin is alive it is green. You kill them with boiling water and it is then that they turn red. We prepare them with lemon juice, salt and garlic and, if you like, a bit of chile powder.
